Cauliflower Dirty Rice

Cauliflower is a flavor chameleon – it will absorb and mimic whatever it is cooked with or if reheated in the same pan that was used to cook fish, shrimp, or chicken it will pick up the remaining juices and flavors.
You can mix in any leftover portion and produce a new tasty dish or in my case an ideal low calorie midnight snack.

1 head cauliflower prepared as cauliflower rice – leftovers ideal

Chop the cauliflower finely about 1/4 to 1/2 inch dice are fine, put in microwaveable dish and cover with a lid or cling film.
Microwave on high for 10 mins or until cauliflower rice are tender – avoid overcooking it as it will lose the “al dente” texture.
Reheat in a pan with seasonings and any leftovers you want to get rid of.
