Stuffed Squash Blossoms

Stuffed Squash Blossoms
6 Squash blossoms – cut early in the day with a long stem and place in water immediately until ready to cook
1 oz herb cheese – Allouette or similar
2 slices bacon crumbled
1/8 onion, chopped fine
1 oz shredded parmesan cheese
1/4 cup breadcrumbs or 1 slice bread cut in 1/4 inch squares

Mix the stuffing ingredients together thoroughly. The bread crumbs should disintegrate if possible.
Trim the stems and inside parts of the squash blossoms and make sure they are clean and free of any insects.
Using a spoon, scoop the stuffing into each blossom, gently pushing the stuffing down into the base taking care not to break the flower.
Fold the petals together over the stuffing and place in a baking dish sprayed with PAM.
Bake in a 350 oven for 25 minutes.

Serves two or three as an appetizer – 75 calories per blossom.

    Are these spaghetti squash blossoms? Or zucchini blossoms?

    These are zucchini squash blossoms, but spaghetti squash ones are very similar. I have quite a few on my spaghetti squash plants if you want some – but they have to be picked in the morning or they close up.
