Spicy Cauliflower Enchilada “Rice”

Previously I have prepared cauliflower rice plain, but I had some spare enchilada sauce sitting in the fridge so decided to spice it up a little.

Spicy Cauliflower Enchilada “Rice”

1 head cauliflower cut into small dice
1 cup red enchilada sauce e.g. Las Pamas
Cilantro optional

Prepare the cauliflower normally for “rice,” cutting into small dice 1/4 – 1/2 inch size is fine.
Place in coverable microwaveable dish and drizzle 1 cup enchilada sauce over the top slowly allowing it to trickle down into the nooks and crannies. Pause for a moment to ponder the analogy with the world financial system bailout. Then place under plastic wraps and nuke for about 10 minutes on high. Serve with optional chopped cilantro – I already had some leftover cilantro in the enchilada sauce.

Makes about 8 cups depending on size of cauliflower – 35 calories per cup.
