Chicken Salad, Artichoke Parmesan and Garlic Cream Cheese Dips

Summer parties and gatherings are a problem for a diet as just about every chip, cracker and snack is a diet disaster. Raw vegetables make a great substitute for chips and crackers – a vehicle for the dip with a lot of crunch but few calories. Dips are more of a problem since this is where the flavor comes from, so I figure that splurging a little on dips and spreads I like is OK because of all the calories I save on the “crackers.”
Here we have cucumber slices, cauliflower florets, olives, and green pepper slices as “chips/crackers.” Carrot chips and celery sticks also work well. For dips we have my favorite chicken salad from our local deli counter, Allouette light garlic cream cheese spread, and a parmesan artichoke dip – recipe below. Fruit is the best sweet snack for a diet and is in season all summer. Here we have a platter of cantaloupe, sweet seedless water melon, and one of the new sweeter pineapples. Also soft fruit such as cherries and strawberries are peaking soon.

Parmesan Artichoke Dip

1 can artichoke hearts – not marinated, cut hearts up
1/2 cup light mayonnaise
1 cup jack cheese grated
1/2 cup parmesan cheese
small can diced green chilies
paprika

Mix all ingredients except paprika, then sprinkle that on top
Bake in 350 oven until it bubbles, about 20 minutes.

Serving size 2 tablespoons – 30 calories
